A Vet Tech is rather like a nurse for animals. They work with the vet, perform routine blood draws, take the animal’s temperature, assist in surgery, clean wounds, etc.
In order to open a vet clinic you would need to be a full fledged veterinarian.
“Animal science” is a very broad field. Animal scientists work in research and are usually employed by colleges and universities.
Washington State University has both a great veterinary college and animal science programs. University of California at Davis are both great schools for animal science and veterinary studies.
